Chhurpi Soup - The Taste of Care

Hello everyone,
You will only found Sikkimese cuisine on this page since the sikkimese food is a rich mixture of Nepalese, Tibetan and native food of Sikkim. Sikkimes cuisine is full of Flavours and is based on rice and maize mainly. It is one of the reasons that most of the dishes made is Sikkimese cuisine have rice and maize in some form or the other.

So our first dish is as follows:-

#1- Chhurpi Soup

Chhurpi soup is a traditional soup of Sikkim and is widely served during many occasions. Chhurpi is a fermented dairy product prepared from cow or yak milk. It is a traditional cottage cheese which gives a texture of a white soft mass with mild sour taste. This fermented dairy product can also be made from whole milk, skimmed milk or butter milk.

Chhurpi can be used as a snack and its powder is also used as a condiment in soups. Chhurpi is also used in preparing the chhurpi ka achar which is typically a popular pickle. Every religion of India has its own culture and food habits which is unique in their own style. Chhurpi soup is yet another popular soup from the North eastern state of Sikkim.

You guys must be wondering that the recipe is quite difficult even I found it a little difficult but believe me it is an easy nut to crack.
So here is the easiest way to make this fabulous dish:

Ingredients:
1 litre buttermilk
1 tbsp olive oil
1/2 tsp panch phoron
1/4 cup chopped onions
1/4 tsp turmeric powder
pink salt
1 tsp ginger
2 green chillies
1/4 cup chopped tomatoes
1 cup vegetable stock
1/2 cup broccoli
250 gm chhurpi

PREPARATION
1. A pan, add buttermilk and let it boil. Strain it in a bowl using a muslin cloth. Drain out the water from it.
2. Cut the Chhurpi into thin slices. In a pan, add olive oil and let it heat. Add panch phoron and let it splutter.
3. Add chopped onions and saute. Add turmeric powder, pink salt, ginger, sliced green chillies. Add chopped tomatoes, vegetable stock, broccoli and let it boil.
4. Add chhurpi and let it cook. Serve it hot.
